We just celebrated Dr. Seuss’s birthday, so it is time for what has become my annual tradition—my Dr. Seuss Whoville poem. Probably every generation feels that the overall moral and ethical state of the world is declining at breakneck speed, but we have two choices. We can either sit and wring our hands, or we can speak out against and fight it!

The Whoville State of the Union:

The Whos down in Whoville are led by Joe,

A man who is senile, incompetent, and slow.

Yet Joe has great vision for the masses.

Looking through his rose colored glasses.

He says there is no worry about inflation,

Which reached a 40 year high in his nation.

He says there is no worry about our debt...

87,000 new IRS agents he will vet and get.

Tax more for tips and forgive student loans.

Burden the working class till he/she groans.

“He” or “she” is no longer permitted to be.

“Ze” and “hir” are gender neutral you see.

When $7.00 eggs were our only choice,

At least the chicken farmers could rejoice.

He says there is no problem at the Mexican border.

Only 2,760,000 illegals used the Fentanyl corridor.

Fuel prices hit an all-time high on his watch,

Yet fossil fuel production he moves to squash.

Electric vehicles are the answer, says Sleepy Joe.

There are no solar or wind car chargers though.

China did not succeed in killing us with Covid 19,

So they sent a balloon and a Tik Tok spy “machine.”

Our cities have become unsafe which caused a migration

To the few beautiful and sane places left in our nation...

Causing us all to question how in tarnation

We Whos’ will survive Joe’s administration?

This poem calls for my favorite apple pie recipe and some other quick and easy forget the problems of the world recipes!

Easiest Best Apple Pie:

8 Granny Smith apples (or your favorite pie apple)

2 nine inch pie crusts (rolled refrigerated work just fine)

1/2 C. butter

3 T. flour

1/2 C. white sugar

1/2 C. brown sugar

1/4 C. water

cinnamon to taste (use lots!)

Place the bottom crust in your pan. Fill with peeled, cored, sliced apples that are mounded slightly. Sprinkle liberally with cinnamon, and cover with a lattice of crust made by cutting the second crust into ten strips and weaving a lattice. Melt butter in a saucepan. Stir in flour to form a paste. Add white sugar, brown sugar, and water; bring to a boil. Reduce temperature, and simmer for 5 minutes. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off. Bake for 15 minutes at 425 degrees. Reduce the temperature to 350 degrees, and continue baking for 35-45 minutes. Cover crust edges with a pie shield if you have one available.

Easiest Best Raspberry Cream Pie:

2 graham cracker or shortbread crusts

16 oz. Cool Whip

1/4 C. lemon juice (Real Lemon in bottle works best)

14 oz. can sweetened condensed milk

2 pints fresh raspberries or frozen raspberries drained well

Mix Cool Whip, lemon juice, and condensed milk. Stir until it turns glossy. Fold in fruit. Chill before serving.

Five Minute Fudge:

18 oz. chips of your choice (milk, semi-sweet or other)

14 oz. can sweetened condensed milk

1 t. vanilla

1 C. chopped walnuts (optional)

Heat chips and condensed milk in the microwave for 30 second intervals until melty but be careful not to scorch them. Stir well and add vanilla and nuts. Pour into a greased 8 by 8 or 9 X 9 pan. Let set up before cutting into pieces.
